Fishao Trout Farm Restaurant

Cooked the traditional way over a fire of Mountain Ash after being left in a brine the night before, you won’t find better Smoked Trout anywhere in Australia!

We are one of the only farms in Australia which uses this method. By gently hand milking the fish only when they are fully ripe and the egg completely formed creates a premium quality caviar. In very limited quantities you can pick some up from the farm.
